A helpful tip: Take 2%/whole milk and measure one cup. Measure one tablespoon of vinegar OR lemon juice. Mix vinegar, or lemon juice, into the one cup of milk. Let sit for five minutes. Ta-da, you have buttermilk.

You're already sinning by eating the flour. Instead of brown sugar I would suggest honey. However, brown sugar is the least adulterated version of sugar. I believe each muffin would be roughly 17G of carbs and maximum 3-5 grams of sugar. Closer to 3 grams, I digress. This is a very healthy take on a breakfast staple.

And if yogurt isn't available, use 1 cup of milk and stir in 1 teaspoon vinegar or lemon juice to give it a slightly sour taste. Let this stand 5 minutes before stirring it into the wheat bran. I too add oats for extra nutrition. I bought oatmeal at Dollar Tree intending to cook it but ended up using it to fortify bran muffins instead.
