Do you bake with steam? I added a bit of boiling water and kept it in the oven for about 20 minutes but I didn’t know if it was necessary.

Can you just use regular flour?
All purpose flour has lower protein, it might be channeling to knead up to get the gluten and window pane, lower the hydration if you use AP flour.

For yeasted, first proof double the dough. Second proof can judge with the dough size in tin

Yogurt yield soft and moist bread. SSS and yudane are two different thing. SSS is a starter that rises the dough while yudane is not.
