    Another great recipe!! Really excited to try this, never seen the crumbly corn flour coating before but it looks soooo crunchy and banging... 15 minutes too, this is amazing. I'll have to get some beers in.

    I never knew about the crumbly technique with the corn starch to give the breading larger crispy bits and fissures. Brilliant!

    Hi chef dai, been following you for awhile just wanna ask is this a better version recipe from the old karage recipe that u post? I used to cook karage with ur old recipe and it taste GREAT!

      Thanks so much. Actually, both recipes I like. The original one is the more traditional one, less crispy. This is a much more crunchy version.

    Between this and your older Karaage recipe, which do you like more?

      Ha, to be honest, I can only read katakana and hiragana so you’re much better than me. I like both, the first video is a more traditional way of cooking. This is a different spin on it, to get a more crunchy exterior. Thanks for watching

      You gotta be joking... Replace a premium condiment with a gustly salad cream...

      You can use any condiment your wish, but kewpie is completely different to salad cream. Try and pick up some. I don’t know where you’re based but large Sainsbury’s stock it here in the UK, as well as Japanese stores too.

    I found your older video on Karaage, and noticed this has an egg and flour in it (plus more of the seasonings), is that to speed up the marinade process?

      The old video contains egg and flour too. To be honest, the only significant difference is the extra coating of potato flour in this video to give the karaage extra crunch.

      Japanese Mayo is called “kewpie”. It’s honestly the best Mayo in the universe

    Chef Dai, can i use potato starch instead of flour? would that be too much potato starch taste/texture?

      Use plain flour in the first stage when mixing with the marinade and then potato or corn starch for the final coating.
      You can of course use potato starch in the first stage too if you wish, just put in less, a bit at a time. Thanks for watching.

    I can't tell, is that your jaw popping or your teeth chomping? As a sufferer of TMJ issues I immediately assumed it was your jaw popping haha.
    I am looking forward to trying this. I've been meaning to cook up some fried chicken and this style is definitely one of my favorites. So crunchy crunchy! :-D
