Can I Beat Dark Souls 3 As The Knight Class

ok so I have had this thought for aaaages where I just challenge myself to play through Dark Souls as each class and only use the class' equipment. Well I finally decided to do it, but instead of DSR, I chose Dark Souls 3. Here's the first class I did; the first class in the game, the Knight
If this is a cool concept then suggest more in the comments, obviously I'm not doing the Mercenary before others because the twinblades are OP af but other classes are fair game :)

Knight is the strongest non magic starting class, wouldnt call it a challenge run personally, aside from that i enjoy watching anyone play the gamd.
