Wow. Thank you Parul for showing us the real way to make kulfi. I honestly believe that this is the tastiest way to make kulfi. In this world, everybody is looking for shortcuts so they add ingredients like corn starch or condensed milk to speed up the time it takes for the milk to thicken to a consistency that coats the back of a spoon. So many people try to pass off imitation kulfi recipes because of convenience. I understand it but I feel that those recipes are a disgrace to how wonderful kulfi can taste when someone takes the time to prepare it properly. The depth of flavour that you get when you take the time to scrape the cream off the sides of the pot/dutch oven/khadai and remix it with the milk is beyond measure. You are slowly caramelizing the milk which is what gives real kulfi such a magical taste. The truth, when it comes to cooking is that sometimes, quality takes time and there is no substitute.
