I made this. It was great. Everyone loved it. The juices in the bottom of the pan were like bbq au jus. My homemade smoker runs 250-275 a little hot so the times were a little less. Always cook to temperature!
If you’re going to cover it with foil, why not just finish it in an oven? You’re not adding any more smoke flavor. Save your wood chip / pellets. Bake it at 325 and finish quicker.
Also, if you’re going to smoke something that’s already been smoked, why not just buy a pork butt, and brine it yourself… then smoke it a little longer
We like apricot aleppo pepper glaze with our hams, 1 1/2 cups apricot preserves, 3 Tbsp light soy sauce, 1/3 cup balsamic vinegar, 1 Tbsp. Aleppo pepper. I recommend using a good fermented soy sauce like pearl river bridge gold light soy sauce.

Those amber-colored plastic pans are good up to 375 degrees. They are restaurant quality and usually used in steam tables. That smoker was well below 300 so it should be okay. Carlisle and Cambro are 2 of the more popular brands.

It’s not a bad taste but it is inherent with all pellet smoked meat. I just have to stick with the old fashioned wood burner, the challenge is part of the final product.

Mix apple butter, BBQ sauce, your favorite rub spices and apple cider together. I used this on ribs , and chops. Occasionally I'll throw some pineapple chunks or apple slices in this.
