@@momolo007 if you want to make best shawarma ever use beef fillet which is expensive. Cheaper option is beef chuck. Slice the meat very thinly. You also need lamb tail fat which I could not find in the US. Honestly fillet does not even need marination because it is the most tender part of the animal. Just season with sea salt black pepper and garlic powder. Stick two wooden skewer in to a big potato and that would be your shawarma stick. Stack the meat on top of each other and every 5 layer put a layer of lamb fat tail thin slices. Back in over at 500F for like 30 min and then take it out and use torch to sear the meat
