Ted, nice work on the oven and the bird. You can step up your stone oven turkey game with a wireless insertion thermometer that connects to your phone. Cooking the whole bird can be a challenge without one. Insert it at the point where the breast and thigh come together and cook to about 155. Take it out of the oven and cover loosely with foil letting it rest for 20 minutes. Then eat.

I would love to make a turkey outside like that. Those juices were bubbling nicely. Definitely cover with foil to hold moisture in. I love cooking out. Granny cooked on a wood stove all her life. Dad brought her an electric one, he worried she might get burnt, but she was afraid of it. I made my own oven/stove out back 38 years ago. I used cinder blocks & the flat cinder blocks to cover the holes. I also used a oven grate for a grill. It never rust. My lawn man brought my grate to the porch after mowing last month. It was all mangled. I wanted to cry. He blamed the cows. My driver thinks it met the mower. I saw all those delicious steaks, potatoes, chicken pass before my eyes. I really cooked out on that grill. Mmmmmmm!

Great experiment! For future campfire birds, perhaps put it breast-side down in the pan. Even if the bird ends up a little overdone, being upsidedown the drippings end up in the breast and keep it from being dry. It doesn't look as nice presentation-wise, but is very tasty.
