Roasted Chicken with Pomegranate

I love this dish, it's a little bit different, but still simple, delicious - and it looks beautiful! Pomegranate is one of the fruits mentioned in the Bible, and is still a favorite fruit of the Mediterranean, where is revered almost as much as the olive tree. Pomegranates signify good luck and fertility. Buon Gusto!

When my grandson was about 2, i would place a stool in front of my spice cabinet. He would take out a bottle, sniff it ,if he liked the smell, he would taste it. By age 9, he made his own bottled hot sauce, and it was GREAT!!!!
