The ONLY Salmon Ochazuke (鮭茶漬け) Recipe You Need

  • 【Ingredients】
    1 cured salmon fillet
    500 ml dashi
    4 g Japanese green tea powder (optional)
    1 ume / Japanese salted plum (optional, chopped)
    1 tsp fresh wasabi (optional, grated)
    1 tbsp crispy rice puffs
    1 handful of shredded seaweed
    1 handful of green onions (optional, chopped)
    【Steps】
    1. Sear and baste the cured salmon fillet on both sides in a small amount of oil. Let it rest aside while preparing other ingredients.
    2. Prepare the broth by combining 500 ml of dashi with 4 g of Japanese green tea powder. You can use any kind of Japanese tea to your preference, or omit the tea for a different flavor profile.
    3. Optionally, chop up some ume (Japanese salted plum) to add an extra layer of flavor.
    4. Prepare a bowl of fluffy short-grain rice.
    5. Add the chopped ume and some freshly grated wasabi to your rice. Top the bowl with the seared salmon.
    6. Garnish with green onions, crispy rice puffs and shredded seaweed.
    7. Lastly, pour the tea broth over the rice to serve.
