I pre-made a ton of black bean patties weeks ago. So, this weeks lunches are a bean patty on top of a whole wheat tortilla topped with smashed avocado, pickled red onion, and everything but the bagel seasoning. Today's lunch was SOOOO good!
I made a spicy chickpea salad. It's a spicy version of your chickpea mock tuna salad. You inspired me this week. I'm trying to use what I have in my house this week.
Back in the day I learned a trick from a chef on Food Network - crush up a vitamin C pill (into powder) and add to homemade pesto, anything with avocado, salad dressings etc., to prevent oxidation. It actually works!
My local Walmart has had those English cucumbers for 98 cents. The regular ones with the giant seeds and the thick skins are 80. Why would I buy those when I could get the nice English hothouse ones? You do what's good for you and your body/baby/circumstances. I eat a keto diet again. It's good for me. (No longer suffering debilitating stomach pains). It isn't right for many. We should all be OK with the fact that one diet isn't for every single person. You keep on rocking your diet that you've realized works for you. Heck, sometimes a way of eating is for a season only. There's just so many factors not everyone is privy to.

Ohhh. I've never microwaved a pancake from batter. I'll need to try this. I often will do an egg in the microwave. I have a special ceramic dish for it, but even a mug will do. Poke the yolk if you want to just cook the egg, or do a scramble with added goodies if you want something more omelet like. These only take a minute or so as well.
I "splurge" on avacodo in small two ounce portions available at Walmart. I don't do this often, but I am the only one who eats avocado in my house. They sometimes last two or more weeks.
