Our biggest challenge here in the Southeastern US in making Indian dishes is the green chilies, jalfrezi, black cardamom, curry leaves, methi, and red chili powder. Everything can be ordered online except for the green chilies and curry leaves. The Indian stores here are often out as well. Thank you for sharing. Absolutely love Indian food.

Why do you add so much ingredients? The actual flavour & taste of the Mutton is totally lost?
Please TRY OUT the same recepie with 1/4 the ingredients & masala, you will be astonished how good it will taste.
Remember, while cooking any Non Veg dish, all ingredients are to camouflage the stinct/deep smell, with the original flavour remaining intact. I cook regularly, I would add 20-25% of what you have included. Try cooking the same recepie with 250 gm's Mutton with my suggestion, you'll see the difference.

I d suggest if they give option of pressure cooking, with appropriate instructions to ensure that person entering in to kitchen at 10 am dosent stay there till 4 PM!
