I think for 2023 'Call it Love' deserves the spot... I can understand why it was not popular. It is not for everyone. It's a slow burn, melancholic, love story with many beautiful aspects of life and lovely ost... If you are not bored with slow thought provoking dramas, it's a must watch.

Scent of a Woman, starring Lee Dong Wook and Sun-ah Kim, was very underrated. But thankfully I discovered about this drama series and watched it few times.
Totally agree. One of my favorites.
"May I help You" (2022) and "Call It Love" (2023) , are the two dramas which are really very good but got unnoticed. Both are good dramas. One is too realistic and other has fantasy element but will make you think about Life.
"Why Her?" is one of the best dramas I've seen. So much mystery, but with the correct amount of romance. We all love the knight in shining armor type of romance.

When my Love Blooms was very enjoyable. I also enjoyed Why Her? I like hearing about kdramas that are well written and acted and go under the radar.

Once again is really nice, funny and heartwarming, the lead couple are kind of boring sometimes, but the second lead couple with Jae seok and Dan hee and their super cute story is AMAZING

Curtain Call & Why Her are the two dramas from this list that I can fully vouch for! They are emotional and riveting. Both are full of great & moving acting performances! Both have storylines that pose sincere and deep questions about honesty, loyalty, love, justice, fairness and redemption.
I watched Why her it good drama but Curtain call is quite boring I give up on episode third
Curtain call is a very suitable choice for the list of underrated dramas I haven't seen the others though. Like to add "Five Enough" to this list.

One Korean drama that I like that is super underrated is "Best Chicken". The first episode was not very good but as I continue watching it improved and the characters are so fun to watch.
I enjoyed Once Again. Another one not on your list is Because This is My First Life on Netflix. I have When My Love Blooms on my ever growing list of KDramas to watch.
PLUS the OST for BTIMFL is extraordinary.

Theres an older one I can't remember the title of for the life of me, there's no royalty, or rich girl/guy tropes, ones not the boss or homeless it's just like, one of them works in a cafe and wants to go to culinary school and the other one whos just a normal friend falls for them

And they weren't childhood friends cause there's no flashbacks
And there's no smut/lewd scenes either

To be honest I watch one or two kdrama a year and some are very good. To me the best one so far is little old - The show queen (2006).
