Hi rik! I am baking a quiche right now, after following this video. Mine has bacon, onion, mushrooms, Swiss, and marbled cheddar. Along with thyme, pepper,and of course eggs and cream. I know one thing for sure... I will never use store bought pastry again as long as I live 😂. I blind baked it, egg washed it like you told me, but it's just a funky mess. I will make your short crust pastry and store some in the freezer for next time. Dang, my kitchen timer ⏲️ is going so SLOW! I'll put the results on my channel if you want to go have a look at it. The mushrooms will release moisture regardless of when you put salt in when cooking, but putting it in too soon will result in soggy mushrooms.
