I really like French Onion soup---especially with some nice buttery/garlic croutons and well-toasted cheese on top...that's almost like a dessert to me
I love onion soup. I swear the first time I made it it took over 2 hrs to caramelize my onions. Who knows??? The end result was yummy. We went all out and made the French onion.
it can take a while...especially when you crowd the pot like I did in this video..it takes a while to cook out the water before the caramelization can begin

I fixed up the croutons and I added some freshly grated garlic to the melting butter to toss the bread in. The croutons alone were addictive. As for the cheese I couldn't make up my mind on Gouda or havarti so I went with both. I've never had onion soup before. It was delicious.

thanks! Beef broth would probably be ideal for this soup--I always have chicken and/or veggie broth on have and almost never any beef broth--I generally add Worcestershire sauce, which helps

Soup is certainly an easy way to get rid of a bunch of onions--and I just thought of another way! Candy onions! just like candied apples, but with onions (this is a thought I just had and I haven't actually tried it...but if someone does give candied onions a go, let me know if you survive)
Do I have to stir it every 5 minutes during the 50 minutes of caramelising? Maybe my stainless steel pot is not as thick as yours, so it gets burnt if its water gets evaporated quite a lot. Thanks so much !
soup hits the spot on a chilly day (or at least as chilly as it get's here in Florida right now). One thing about being farther up north, I sure appreciated soups a lot more back then
for French onion soup, I pretty much make it like this simple soup, but when I serve the soup, I do so in an oven-safe bowl, then I'll top the bowl with croutons and shredded white cheese and broil until the cheese melts and gets a little toasty on top; it's pretty decadent that way

I don't know if it's fair to skip all the pain that cutting that many onions at once causes. I light a lil candle while I slice onions. Does it help? Maybe? I'd almost rather burn a nose hair than cry cutting that many onions!

onion soup is a pretty flexible dish---as long as you've got a bunch of onions you can whip up some kind of onion soup!

I prefer Beef Broth in my Onion Soup.
I think beef broth would be ideal--it's not a broth I generally have on hand--but the Worcestershire sauce adds a hint o' "beefiness"
