- Have you ever wondered what goes on at a French chocolate shop (called a chocolaterie)? I'm going behind the scenes at Bourdillat Chocolaterie in Saint-Sylvain-d'Anjou, France, to show you how chocolate confections are made.

I saw a sign in a local restaurant that I thought was cute: "Le chocolat est notre ennemi. C'est lâche de fuir devant l'ennemi." (Chocolate is our enemy. It is cowardly to flee before your enemy) :)
Amazing how almost all of this is done by hand. An art form with a great work ethic. In the States these industries are all automated and mass produced for profit. But in France, these are made with creative enthusiasm, each piece, no matter how big or small, literally every bite, fashioned with great care. I love to watch the artist, Mr. Bourdillat, at work. Great video series.
You can also find industrial chocolate in France but really the difference in taste and quality is big….
As with the bakery videos, this is fantastic! Like with the bakery, it is fascinating to see the marriage of automation and artisan craftmanship... employing both parts of the manufacturing process to their maximum benefit... and to know that each item is designed to both look lovely and taste divine! If only the video could come with samples!!!

Oh my goodness! I visited this very chocolaterie when i was studying abroad in Angers last Summer! M. Bourdillat gave an excellent presentation to our group on chocolate making. This was an exceptional video! It's an art to make beautifully tasteful chocolates and this process was fun to watch! Leave it to the French when it comes to most anything artistic!

Ordered a box of chocolates from Vienna this past February. It was really good but loved their minced apple strudel bar that had flaky pastry covered in chocolate. Well worth to experience treats by artisans 🍫🍏🍍

L.O.V.E. the behind the scenes videos - bakeries and chocolate especially!!! What a treat. A behind the scenes at a cafe or restaurant would be interesting... (the wait staff have their 'career' as a waiter most times, right?... unlike in the US where it is often a low paying 'stop to something else' kind of job ... ) A video on either the back or the front of the "house" would be great ~

Diane, you have been missed. But it was worth the wait! Gorgeous chocolates, loved that chocolate box and was thrilled that we got to see one made from start to finish. I wish that the training systems in the US were more like France as the young people seem to take great pride as was seen here and in the Bakery series. This was informative and fun....yes, please, more of the same, if possible. My favorite chocolate is artisanal, so this was a treat to see behind the scenes in France. I have to ask if you did get to sample some chocolates and did you take the lovely tray of the coffee pot and cups goodies home?
Absolutely had a few samples! They have a special blend called "blond" that is a light chocolate with a caramel flavor and it's delicious. I generally don't like super sweet caramel things, but the ones the owner gave me were phenomenal. I WISH I got the coffee tray. It's too beautiful to eat. I'd feel bad! Thanks for watching.

This was fantastic Diane.. I've always wondered how chocolate was made. Now I know why it so expensive. So much detail and craftsmanship involved.. I loved that you showed the young students explaining how they came to be there... One of the girls had not one but two CAPs working on her BTM.

Diane, I appreciate the emphasis you made on explaining that tradition..I love that there is a pride and aprreciation for creativity..working as artisan..doing artistic apprenticeship..this widens the prospects of career choice ..I have found it sad how in some western countries young adults and teens get judged or made to feel inadequate if they are not from academia ..learning only for high paying career and disregard for their unique person abilities...what do you think? My parents are from middleeastern background and snubbed and shunned all my creative abilities ..I am now in my early 40's so tjankfully found my way back to what makes me me ..and brings me fullfillment..It might take longer time to see high earnings but I know a) this is not sometjing to focus on..and that b) it will start to flow as a reward for dedication to real craft true self. Ohhh, this makes me miss France even more. I went to that well known culinary school in Paris and specialised in pastry but I’ve tried my hand at chocolate at home. It’s more fun than Play Doh -and you can eat any mistakes.

I suppose chocolate is one of those things that allow us to savor a type of sweetness that becomes apart of us. The delicate French Chocolate flavor is the ultimate sweetness and therefore the most memorable. Needless to say, I love French chocolate!

This is a very interesting and entertaining video! Thank you very much for making it. The special order is very impressive, absolutely astonishing work. Personally, my favorite kind of chocolate is very dark, at least 70% cacao. I like it very chocolaty and not sweet, but I'm happy to eat milk chocolate, too.

That was amazing! I love dark chocolate especially dark chocolate covered almonds.
I was in Lyon in 2019 and had dark chocolate covered almonds and was flabbergasted at the roasted almonds. Half a year later, I read an article wherein an organic almond grower referred to commercial-bulk growers' almonds as tasting like cardboard. A couple months later, I bought cardboard in the shape of almonds. Bought the organic almonds and wow. Raw they were great and roasted in my oven (just heat) they were one step back from the Lyon chocolatier's but still, so so much better than bulk commercial.
