This is not is pasteurization process, which would kill any bacteria introduced by dirty hands, sneezes or poor hygiene of the production line workers. The process is called spherification and it's done with sodium alginate and calcium chloride. And the lack of hygienic covering and gloves with the workers is problematic. Plus the fact that they're letting her put her hands into the production line and then put product back into the line to be packaged and sold.
