Cacao Butter Recipe - Raw White Chocolate

    Ingredients
    1 and a quarter cups of cacao butter (melted)
    1 cup of coconut flour
    Half a tablespoon of vanilla bean powder
    Quarter of a cup of raw honey or coconut nectar
    Preparation
    Start by finely chopping up the cacao butter. And gently melt.
    Pour the melted cacao butter into a bowl and add all the remaining ingredients and whisk everything together until smooth.
    When smooth, pour into desired moulds and put into the fridge for around 2 hours or until set.

    I think the presenter confused coconut milk powder with coconut flour. Coconut flour (even finely ground) won't dissolve properly and will result in a grainy mess.

      That is what happens with what is done today, they talk about adding agave or maple to food, as if we add a huge succulent or a darn tree to what we make, while we in reality are talking about agave- or maple SYRUP! Many only learn these half names and believe that is the names of the products. No wonder coconut milk powder gets mixed up with a similarly named product, when nobody uses the whole names anymore. It is confusing. I don’t blame this young woman at all, because you are influenced. Maybe she didn’t even know the difference. Great you posted, no fun to lose these expensive ingredients (very expensive, I even have to order cocoa butter online)...

    im really confused in terms of what you can and cannot add into choco for flavor for ex. Vanilla, extract is water based, how does this not cause cause problems? and what type did you use here because all I heard was Vanilla.

    Coconut powder as in - the stuff left after coconut milk is taken out and the left over bit is slightly roasted nd ground?
    Or is this fresh coconut ground in mix with its moisture and then somehow dehydrated?
    Dessicated coconut is also a thing. Not sure. But kindly reply i would like to make these without milk

      @@me.1475 I am a sous chef so I believe I’m qualified to give you some advice lol hope you’ll be open to it. It doesn’t matter what type of vanilla to use, you can use what you have on hand. Vanilla paste, vanilla bean, vanilla extract, or vanilla flavor. As long as it’s vanilla. For this recipe I used vanilla flavor with a vanilla bean. I like the smooth sweetness of vanilla flavor. Vanilla flavor is used with glycerin instead of alcohol. Also, you can use regular milk powder unless you are a vegan then do use a non dairy powder. This recipe is flexible, it’s hard to mess it up. Don’t give up!

    I need a help please… As soon as I added raw honey, it started making blobs, and more I mix, more cacao oil separated from honey and coconut powder. What did I do wrong?

      @@NonanoN-er6de Thanks :) If I can find coconut milk powder which does not smell like rancid (so far, all mushroom coffee, coffee creamer made with coconut milk has this rancid smell, I really dislike...), I would definitely try it again.We used the big expensive blobs in chunky white chocolate cookies, yum.

    I notice in the video it says "detox your world"...I've been heavy metal toxic from too much pink Himalayan salt for maybe four years and have tried many ways to detox without success. What can I do about this?

    First off thanks for the recipe. With corrections this looks like the best recipe for dairy free white chocolate. I noticed you said 1 cup coconut flour but I thought that was odd so after checking the other comments I see you made a mistake by not correctly saying coconut MILK POWDER. Huge difference between flour and milk powder. Also it's called sifting not shifting in flour. I'll also add more sweetener. Thanks again.

      This works with coconut milk powder. Coconut flour will give you a grainy mess and the result will look nothing like chocolate

    I really hate the coconut flavor so I use whey protein isolate instead, it adds texture just like milk powder and it's almost 100% protein (no lactose or casein).
    I also use stevia (liquid) + erythritol (finely ground ) for bulk as sweetener because I'm on a low carb diet but otherwise I would definitively use honey, it's delicious and so good for your health !
    Oh and for those of us who cannot wait 2 hours just put them in the freezer 20 to 30 min ;)

      for low carb, if you use coconut nectar, (does not taste coconutty, at all) you can still be low on the glycemic scale.
      It will still be good.

      +taneishag90 that's my main prob when I first made my chocolates, I guess it's better to use coconut cream you have to experiment with the measurement though.

      The description box has the recipe written wrong!!! It should be coconut milk powder! So frustrating -- and the amount is wrong, it should be 1/4 cup, not 1 cup.

      A cup is a specific measurement that never changes. A cup is equal to 8 ounces. It is never more or less.

      Unapologetically Amy : A cup is always a cup in volume but by weight it depends on what your using. A cup of feathers does not weigh the same as a cup of gold! Here are some food weights for one cup of ingredients: butter 8oz or 225g / granulated sugar 6 3/4oz or 200g / flour unsifted 5oz or 140g. Exact weights are essential for good baking (though not as necessary for cooking). Stay safe 😃

      Agree as honey does not disolve in an oil. So powdered sweeteners are better like erythritol or enven coconut sugar finely grounded.

    I followed the video instructions & it looked easy enough but mine turned out gritty and looks like applesauce. Does anyone know what I've done wrong?       I've got lots of experience with coconut flour, and this is how I'd expect this recipe to turn out, especially in the quantity she used. I'd honestly guess it was the CF that did this to you. I was kind of shocked when she used it.

    I just want to let you know that there is no such thing as raw cocoa products. To become edible, the beans must be fermented. This can raise the temperature to up to 70 degrees Celsius, basically cooking the beans.

      You have to grind the nibs, put them into a bowl, bring it into a boil, add some water then you're going to boil until the cocoa butter starts to separate, after that, you're gonna sieve it using a strainer, the leftover mass can be even more dehydrated and be used in place of cocoa powder, there are some videos in RUclips.

    No way are you using an entire cup of coconut flour in this recipe - it would suck up all the moisture in the coco butter and be grainy as all heck no matter how finely ground..... what is the "coconut flour" you actually put in it?????

    Wow. It may be raw but I'd like to see the insulin response from a serving of this. These raw foods are healthier than something like a mars bar but you really couldn't call it "healthy"

      Actually, I'm diabetic and don't use meds to control my blood sugar levels, I use diet instead. And coconut, i it's many forms as well as cacao don't cause spikes in my blood sugar levels. (I check it 2 hrs after I eat and it's between 75 and 89 - which is very good levels - literally, normal blood sugar levels) So, yes, this can be eaten by diabetics and not cause a spike. It has to do with the source of "sugar" and amount of fiber in a food. Surprising, I know. But I also know what my A1c level for a 6 month period is and my daily blood sugar levels are. And the levels indicate my glucometer is functioning well - which means my results are indeed, accurate. I will say, it's not low calorie and from that standpoint, it's not an eat all you want of it item.

    I find it absolutely repulsive that you have failed to issue an apology. A lot of people have followed your recipe and been thoroughly disapointed by your instruction to use coconut flour.     Honey is not necessarily the best ecologically speaking as a sweetener. Some poor bees are given white sugar to eat instead of their honey because the beekeeper has stolen it for chocolate. An ecologically fair trade cane sugar could be considered as an alternative.
