Hi Tony, just wondering on the meat, is it good as steak or just good as sausage, and as a slaughterman of 45 years i hope you have a steel for the knife, makes all the difference.

I usually just mince it all. The backstraps are good as steak if you age them, but I don't have the time or bother now days for it, so I just mince them too. Sometimes I keep the shanks for bone marrow and slow cooking 🍻

@SammitchHomestead1 wouldn't sight a rifle in or do any pest control work with them, but for the odd shot on deer they're fine 👌
