Personally I would only segment my products based on shopping ad groups or asset groups. In other words it's the top level hierarchy that defines what segments my products are in. For example for Pmax I like to have my campaigns structured by performance and then by product category the segmentation then happens based on this hierarchy. Also something that wasn't mentioned in the video is that in order to segment your products effectively (especially with custom labels) your Merchant Center feed needs to be spot on with all the relevant segmenting attributes.
