Some things to keep in mind while opening a restaurant:
1. Your Budget
2. Locality/Rent - see if it lacks the kind of flavour your want to bring & if the public will be able to accept it, you can start running tester samples before launch.
3. Cuisine/Menu- very important as it'll determine the no. of people required in your kitchen & it should be something worth paying for.
4. Chef & Manpower- how many people need to coexist in your kitchen & build on their strengths
5. Equipments- don't hesitate going for second hand equipments as many food businesses start & shut quickly in india, a lot of equipments are new and you have to check quality & bargain to get the best price.
6. Water / Electricity Supply- better to get this sorted before starting with interiors or loading in your equipments.
7. Chimney & Ducting- to direct the smoke away from the stove, out of the restaurant & make it a breathable place.
8. Cutlery & Packing Cost- buy in bulk & not per piece to save money.
9. Licensing & Food Apps Registry- better to start early on this as it takes a lot of time & legalities
10. Interiors / Furniture- go with your gut, the kind of vibe you want, see your resources and make the most of it
11. Salaries & Daily Run Expenses- important to keep a running kitchen & sell your dishes in order to keep the inflow of money.
12. Remember your reason- be it your will, your passion, or your desperate need to earn or serve people. Remind yourself that one reason why you started & it will push you. Having supportive people around helps.
