    After 20 years of growing collards, today I am canning them for the first time. No more freezer full of veggies. I am a retail butcher by trade and value my freezer space for vacuum sealed meat. Years ago I grew 4 - 30 ft rows of collards to sell to soul food restaurants. No more restaurants, but still grow 2 - 20 ft rows of collards. They are easy to grow and produce bigger and better quality leaves then store bought. Thank you Mamma T!

    Glad to know that I'm not the only one who cans collard greens. I remember one time, I canned the greens with some smoked neck bones, and the bones were soo soft, you could EASILY chew them. :-) I LOVE the convenience of having them anytime I want without having to go through the WHOLE production of cleaning and cooking them EVERY SINGLE TIME! LOL!!! Just take out a jar, heat it up, and it's GOOD TO GO!

      I hear you on that! it is a long process cleaning them and all but when all that part is over i love it too
      the convenience of having them in my pantry so what i'm going too do is start canning them every saturday.
      because those greens go quickly in my house my adult kids come and shop at my place. i appreciate you

    I just now done 6 quarts of collards, they are absolutely beautiful in the jars. My jars are full and beautiful. Have never been much on seasoned collards as we love them fresh and cooked with smoked neck bones but I must say these smell really good. I added chicken broth, garlic ,crushed red pepper and the onion. Im gonna have some happy kids lol.

    Heya! Great instruction. I’ve been canning collards for 5 years. I use smoked turkey legs or wings. For something that takes soooo long to cook and tastes soooo good, canning them really makes it a cinch to eat and enjoy whenever you crave it!!

      I'm canning mine for the 1st time; using smoked turkey as well. Question- how long did u process urs? did u use the water from ur meat in ur jars? and did u cook ur onions and garlic b4 adding to the collards (I dont want mine to become soggy over time, and thx!

    A little hint for others is adding white vinegar to the wash water REALLY HELPS getting dirt grit grime & pesticides off your greens when washing them...you crack me up cause I wash them 6 to 8 times as well...hugs & thank you!!!

    Thank you for this video! I’ve been canning for about 5 years or so but never done greens with meat in them. So I needed this. I gotta get my New Years greens cooked and canned in half pints since there is just two people in my house.
    I always say my canned stuff is like having a healthy and cheap McDonalds in my cabinet. When I get home late and we are hungry I can open a jar of chicken and some vegetables and we’ve got a good dinner.

    Just a safety precaution, my ex worked for our local cooperative extension.
    They said never put food stuff in a garbage bag because they have chemicals in them for bugs and smell. I would research this to be safe.

    I made my first batch of greens using your recipe, several months ago. I never got to can them, because my family ate it all up. Now I'm back, because it is time to have another go, this time, with LOTS more greens!

    Hi MomaT so glad you're feeling better! I grew up around canning & freezing but other than snapping beans or peeling apples & pears I really didn't participate hands on...wish I did becauae I definitely believe it's the way to go! I do know a little bit about how to freeze veggies by blanching them! You're awesome at what you do! tfs 👍😃

      Thanks it seems the infection didn't want to let me go! i was drinking way too much soda and sparkling
      water and no plain water. i do freeze some things as well and their
      is nothing wrong with that except when i loss power i lost hundred's of dollars of meats and from
      that point on i started canning, it was a hard lesson to learn. so thank you so much for watching!

    Bona Appetit! Thank You! When I first started gardening, I grew tree collards, I'm growing collards greens this season. I like to add smoked turkey necks, and drum sticks, I cook it in a 5 liter pressure cooker. My Grand Mother, who raised me, she would always cook great meals. I remember all the holiday special dinners, and especially on New Years day, we would meet and we would enjoy black eyed peas, (Hoppin Johns), corn bread, hush puppies, dumplins, and of coarse collard greens, I remember her story she shared when ever she made her collard greens, my father would fight with his brother over who would get her pot liquor. We had a apple tree and she would make a delicious apple pie, and her lemon meringue pie was her specalty.

    I did my collards today the way you said and they came out great ❤❤ Then I had a lady on a canning page on Facebook tell me not to consume because this recipe was not safe. Haha I told her where she could go!! You do yours the way my grandma use to. So thank you for your recipe ❤

    I am fortunate that my son grows an organic garden and I pick all I want. I fold the collard green leaf in half and take a knife and slice the stem off and leave it for composting. When I pick a garbage bag full, I saw someone put them in their washer on the gentle cycle to wash them with a couple drops of soap and then add vinegar to my rinse cycle. Works GREAT, saves a lot of work. Thank YOU for your recipe and walk through the entire process. I never thought about putting the rings in the boiling water, helps to seal better.

      thanks for watching. and i grow my own vegetables and when my family
      has eaten all the collards that i have grown and canned i will go buy some
      from the market. hey if you like washing your greens in washing machine
      and it's easy for you that is wonderful. but for me i wouldn't hear of that
      i would be thinking about all the germs in that machine and my mind would
      wonder off with that.

    Great video, I've only caned tomatoes, green beans, corn, potatoes, and tomato juice. Now I'll be canning some collards, turnips greens and some spinach. I love them with cornbread too!

    Just found your site. Really like it. I have been canning for a loooong time. I also cook greans, beans, meats, squash, tomatoes, well I guess I should just say everything. I love canning because it is so good as so ready. Open, heat and eat. I do roast and everything. I however learned that when pressure cooking, it isn't necessary to have your jars hot, nor heat your lids. I have never heated my rings. I take them off after 24 hours after they have sealed. I wash them before and after they have canned. To me, there really isn't much you can't can. I have done hamburger, sausage and everything. I love it.

      i'm just a clean person and i will triple wash things so every person have their on way of doing things and

      I didn’t know you could can them but am headed to the kitchen now- I have got them off the stems and washed them 7 times now! Do I need to add sugar to these?

      @@MammaT Hello! Yes, I did can them, got 36 pints. I followed your recipe and I liked them quite a bit. I've never had "southern style" before, just cooked them up with bacon or something as I've only grown them a few years. Your instructions are for sure the best on RUclips. :) I watched several and saw right away you were the woman to follow. :)

    Mamma T, those look absolutely delicious! I'm pretty new to canning, but I've done chicken, chicken bone broth, tomatoes, black-eyed peas, potatoes & carrots, and balsamic onion jam!!       I canned the Collard greens and they turned out beautifully. I processed them 75 minutes and they did lose some juice for some reason but over all I am very pleased..

    Beautiful. I "almost" stopped looking when you only did a single stack on the first load (just because of the time it takes to cool down the canner and process each load). You totally kicked butt though when it came to the 2nd round. Canning is infectious. My youngest, when I first canned green beans, asked what was in mine and I said "green beans, water, and salt", and he promptly threw away every other can of green beans that had more than 3 ingredients.

      I sub'd to it. Looking forward to seeing what you do. I "got in trouble" because the husband says that I've "canned enough", however, 500 jars ain't gonna last a family of 4 a year, so he's just gonna have to suck it up and build shelves! Have you tried the chicken pot pie recipe in the new Ball Book? It's AWESOME

      I have blackberry jam, black & blue jam (it's to DIE for - tastes like a sweet tart), vegetable soup (2 different kinds), bone broth - chicken and beef, tomatoes of all sorts, salsas, corn relish, a bunch of dried beans, and a bunch of other stuff. It's pretty crazy. Since Thanksgiving, I'm down about 50 jars. I'll pick up a bushel of green beans from Sprouts when they hit .88 a pound, and do 32 jars at a time - oh yeah, and I have about 80 jars of applesauce right now for eating and baking with :). My new favorite though? Yellow mustard. EASY PEASY and so much better than store bought.

      but the last time i bought some they had sand in them still as if they didn't wash them enough
      so i started canning my own plus if i can greens every other weekend i would have enough for a whole
      year just from me canning a couple of months. thanks for watching....

    If you take your 15pound pressure gauge off as soon as it hit zero, your lid may not get stuck....and also before you run the canner, you should grease the lid/canner at the metal/metal contact...

    One more thing: the first thing I ever canned was fresh green beans. I learned the hard way that removing the rocker too soon can siphon all the juice out of your jars. So in addition to burning you, cracking your jars, etc, it can also make your stuff gross. Lol!!!!

    We have tried collard green but they where nasty. Just the greens with slt and pepper. So the next time I am at the store I'm going to try a small bunch for dinner and see how it goes.
    foot note Vaseline around the top will help stopping sticking on the all American canner :)

    If I bring beans and corn bread, can I come over for dinner? Lol! Thank you for posting this. Commercially canned greens have way too much salt for me. I can’t wait until next fall. I’m canning me a big box of greens. Yum!

      Lol! yes you may come over for dinner. i agree with you on too much salt in store bought canned greens
      i hope you enjoy your canned greens next growing season that's if you can keep them on the shelf. Lol!
      they don't last that long in my house my family eat them quick as i put them in pantry.

      Thank you Bliss and yes i love me some greens also! it took a couple of hours two pick and wash them
      and i had help separating the bad greens from the good greens! a lot of work but well worth it.

      Definitely no easy task I Can Only Imagine I wish I can go and pick fresh greens this is the time when I miss my g ma she used to have a garden and we used to be able to get fresh greens and other vegetables

      Yes grandma's are missing but you can learn to grow your garden just remember what granny did and keep trying til you get it down
      i grow in pots and buckets and i did pretty good this year except my corn. take care bliss and have a great day.

      75 minutes per official guidelines for pints and 90 for quarts to kill botulism.

    Your collard greens look delicious.
    Glory greens were too expensive, spicy and hot for me.
    It's true that you don't know what all chemicals in the cans.

      thank you and after you can your own greens you will taste the difference between
      the two and you are going too love having them on hand i try too keep
      at least 20 jars of greens on hand at all times but i must say it's pretty hard
      because myself and my family loves them.

      Thanks for watching. and i did put oil on the rim off my lid but it still get stuck.
      you should try it because it's delicious and save plenty of time for next time you want
      too eat them. my greens never stay in my pantry very long i have adult kids and my house is
      the store Lol! and i love collard greens as well.

      yes just cook the greens a bit longer and then cut your beets up and put them in jar and cann them with the greens
      according too your town 10 or 15 pounds of pressure for the time specified for your potatoes. thanks for watching.

    This is the way! I saw another video where someone was using scissors. I don't trust anyone that uses scissors on their greens.
