Love your videos Matt. I've been a subscriber for many years now and feel as though I'm a genuinely better cook because of it. I bought a wok probably 3 years ago because of your suggestion and have loved it ever since. Wishing you all the best.
Japanese omurice uses ketchup, I like Filipino spicy banana sauce. I often use short grain rice for fried rice but long grain seems more common for chinese, thai.
I like how you add “umami” to Chinese style rice … in Japan, if you want to add real umami Japanese style, we also bring in mirin and sake with soy sauce. The great thing about fried rice or chowhan is that anything goes with regards to vegetables, meat or fish.
As an Asian, I have decided to declare your fried rice dish as authentic regardless of what the snobs say because making good food is traditional. You may use my comment to prove authenticity of all your Asian dishes. :)

I make fried rice faster. Start 1/2 cup of rice cooking in the rice cooker with the elephant logo. Cook 2 TBSP of garlic from the jar, 1/2 cup onion in butter or olive oil and add pepper. Set aside. Scramble 2 eggs in butter with pepper, no salt. Chop into little bits as it cooks with spatula. When rice finished, combine with garlic, onion, and egg. Immediately add soy sauce and gently fold the rice over so it doesn’t smash and soy sauce starts to blend in. Keep adding soy, stir gently, and taste repeatedly until it has the right amount of soy. Now it is basically done. Add green onion and/or sprouts to make it better but not necessary. That’s it! I’m not good at planning meals ahead to dehydrate the rice. Learned to make fried rice without frying the rice lol Yours looks better! My Japanese better half said she likes rice with a fried egg plus tonkatsu. I’ll have to try adding tomato sauce
Chinese Ketchup refers to fish sauce not a tomato sauce, so you're still wrong. I'm not sure if that short that you made was supposed to be a joke or not. If you see my comment, can you clarify? Thanks. :)
Great video Matt! I love rice and especially, fried rice! Will be trying that Kimchap from Hmart soon. Thank you for that.
