@@connybannowsky9692 did you adjust the heat at all? Was your weight regulator set at 10 pounds of pressure? If you adjusted your heat and your gauge never moved I would be cautious because maybe it’s faulty.

Instructions are the best I've seen. Most channels I've watched don't advise to restart 1 minute timer and adjust and readjust heat until you get correct number of jiggles per minute. Your video was the most precise IMO. 👍🏾

We lived in the country near Visalia, CA with a big garden and used to can with it a lot. Then we moved to the big city and no longer had a garden or time or energy to can. It has been in storage unused for at least 30 years but still looks nearly new. I'm now retired and live in the country with a huge vegetable garden. I've got it out of storage but it's been so long though that I neither have the instructions or remembered exactly how to use it. Your vid will help me to begin canning again. I've liked and subscribed.

From you I learned (if I understood correctly) that I can test it myself when the gauge matches the weight with prescribed jiggle. I assume the other weights apply as well, yes? Thank you. Yes so same thing with all the weights! In my experience if your gauge is off so will your jiggle test. When canning make sure to watch for all signs that your canner is operating properly. Too much jiggle and your heat is too high. If something is abnormal outside of these safety parameters I would wait until you could get your canner tested to be safe. Hope that helps! So I just got an AA and did my test today very nervously. I am at 15 due to elevation. If my weight is jiggling correctly I am bo longer at 15 on gauge. If I turn down heat to get the 1-4 jiggles the pressure gauge is no longer at 15 PSI. I am very frustrated. Does it have to BOTH read 15 PSI and do the 1-4 jiggle a minute simultaneously? How do I correct this issue if thats the case? This is brand new & was my first test.
Did you buy your AA brand new? The reason I ask is because your dial might be off. You definitely want to go by the jiggles per minutes. The dial in this case is just a back up.

I keep my heat just a tiny bit higher then four rattles per minute the pressure regulator gets rid of the pressure and it makes sure that you don't have a boo-boo
You can do that, but realize that you’re not canning at any higher pressure, it just means that you’re boiling water harder. The weight used will be determinate in the actual cooking temperature based on your local altitude. If your All American weight gauge is jiggling beyond 1 to 4 times a minute, say 7 or 8 or more, the relative pressure is still at whatever pressure you’ve chosen on the weight gauge. So, the canner is doing its job, just working harder at maintaining set weight gauge pressure, and in doing so, you run the risk of boiling your canner dry, which could lead to destroying the canner as well as improper product canning.
Thank you for the video! If you’re canning at 10lbs of pressure with your weighted gauge, is the pressure dial just a backup to show that the lb is remaining at 10? I’m confused as to what the pressure dial is for, other than monitoring it going back to zero. Thank you!
Yes it’s to double check! But just remember that sometimes the dial gauge can be faulty and so you shouldn’t rely on it 100%. Keep paying attention to the “jiggles” per minute. Hope that helps.
It lubricates the edge and allows for a better seal. It’s recommended to do in the instruction manual. Many times people will recommend oil around the edge if steam escapes from the rim of the canner. Hope that helps

At around minute 4 you state that the heat is on high. Then at minute 7:30 you point out that the stove if turned to low. I did not see you make that temperature change in the video. When did you make that change and why?
Well you want to keep your canner at the proper PSI and with the appropriate jiggles per minute so you need to adjust the heat on your stove in consequence.
I must be misinterpreting the jiggle but I’ve heard it hits every time it hisses that’s a jiggle the way I’ve been cooking for years it’s letting steam out so therefore it’s exceeded 15 pounds that’s a jiggle but you’ve waited till it had an extreme jiggle so six of 1/2 dozen the other if it’s not letting air out and then it lets air out all of a sudden it exceeded the psi
All pressure canners (with the exception of pressure gauge-only canners, non-weight regulated canners) will continuously allow some air to escape during the canning process, that’s why they hiss. When it jiggles, that means the pressure has built up enough in the canner to warrant a greater necessary escape. The weight used regulates the amount of pressure inside the canner; 5 lbs., 10 lbs, 15 lbs, whatever is required for your geographic altitude. The extreme jiggle you’ve mentioned is part of the tempering process where you then adjust the heat source to bring it down to regulate a slow wobble, in the case of a Presto, or 1 to 4 jiggles a minute for an All American. Please refer to the user manual of either canner for correct use, and stop gambling with safe and proper use of pressurized vessels. Also refer to the USDA Complete Guide to Home Canning - 2019 Revision. This is all detailed within.
Sorry but no. The steam needs to vent for a full 10 mins before placing the weight regulator on. These are instructions for an All American brand of pressure canner.
Instructions for which pressure canner? I’ve used several, and not a one says to do that. You must vent for ten minutes after steam begins to escape, then place the weight on, then adjust heat until the weight jiggles one to for times a minute on an All American, or in the case of a Presto, does a slow steady wobble.

The weight regulator helps you to know whether or not your gauge is correct your gauge can be off but the pressure regulator will never be off

How long does it take to get a steady stream of steam? It seems to take forever to get my canner to have a steady stream of steam.
I also do noy see a consistent stream of steam but if I put a small bowl above it, there is water on the bowl.

You fool yourself with electric although if you're good and you know how to handle it any heat source is fine, 😳
