You should blend/mash some yam or plantain with the broth to thicken in the event (as does occur) that yam doesnt thicken it. If you can get Puna yam (in UK) or Onitsha Yam, they do starch in the Epuru usually without need for mashing to thicken.

Yes cook your meat till a little bit tender then add your plantain or yam.
