Mollyuniverse I'm super skeptical about that part. The reason I use an edge to crack my egg is because it will crack a smaller area of the shell, creating less shell pieces to possibly get into the bowl. I don't understand how a professional chef can think differently. Am I just an idiot? Am I missing something?

Chef says “won’t get shell in egg” gets more shell in egg than literally everyone else
It's blood from the egg. It's common when you have farm fresh eggs to get have blood in them. You can eat it but a lot of people, myself included prefer to use a shell to take it out.
He didn't break the shell in two usable halves, so he then HAD to separate it by hand. Some shells are more brittle than others, some have an inner membrane so tough that it needs knife/fingernail to be cut open. Either way, it's tricky if you have a mix of various eggs - the exact same force applied for some eggs would splatter the brittle ones against the surface. I generally hit them against an edge and never had a problem that chef mentioned.
