Honestly, if you set the game's playback rate to over 1, it's delta doesn't divide to the playback rate and that results in choppy gameplay.
Also, in 17:58, the cars stop moving at ridiculous playback rates because of how they function
Out of everything I expected to see in this video, using a Blue Shell on yourself at 15:25 was not one of them.
