Mineral content, other trace ingredients found in salts, and shape also affects how we interpret its saltiness.

Morton’s is much easier for me to find but DC is definitely better. slightly more uniform and considering I do a lot of BBQ, it’s a similar grain size to 16 mesh black pepper.

You can create a slurry sauce by mixing cornstarch (and maybe butter) to your vinegar, before adding the garlic and scallions. Another thing you can do instead is just add dry ranch seasoning mix to your vinegar. Anything to keep the vinegar from being the consistency of water, basically. Just exercise caution though because both distilled vinegar and ranch mix seasoning can be very potent on their own, definitely start with less and work up to taste. Vinegar powder is much more forgiving and almost fool proof.

Salt is salt unless it contains significant amounts of additives. Also, sour/tang complements fat/body in a dish, not saltiness. Sweetness complements saltiness.

I use Morton's coarse, too!!! But, flats are the best! DEFINITELY going to try this!!!
