One thing that I'm not seeing in this video is how you would manage subscriptions. So, if you were setting up a membership-type form, how would you track those memberships? Love the videos, just looking for a little more on the subscription side.
How does Fluent Forms integrate with a custom fields/posts plugin like ACF? I feel like the ideal way to build a website using this would be to create a CPT for products. Then you'd insert the form inside the single product template and allow the price to be pulled in from an ACF field. Does Fluent Forms allow for that?

I don't think so, no. This should be considerably less taxing on resources over something like WooCommerce. But, you are sacrificing more advanced functionality with this method.
While I haven’t tested it, I assume that connecting to a proper payment gateway would send an API call back and update the payment status on completion. You should also be able to use the relevant shortcodes to handle order confirmation.
While I haven’t tested it, I can’t see why you couldn’t use calculation fields to add shipping on. Obviously, if you want more complex ecommerce options this may not be the perfect choice.

I do it with FluentCRM, and every user in the site have different tags applied. If you use woocommerce and forms and CRM, you could use WPfusion ;))

How can I use fluent forms to achieve visually product variation/attributes selection? With some image for customer to select.
Nice lite solution for something very simple. What about the order confirmed page with purchase details? You have to manually mark as paid?
