I know the is a really old video but as a non American single person I love that all the produce is loose and not bagged up n ridiculous quantities that are just going to end up in the food waste bin, that is one thing that is so annoying about shopping/cooking for one.
Married to a Mexican for 17 years now. They use cilantro alot. I love it. They also eat cactus, I love that to. Lol. When I go visit my mother in law in Mexico, I know I want be hungry because I love authentic Mexican food. I have learned to cook Mexican food through her, my husband, and in laws and friends around us.
Love ❤️ plant based options. I have 10 lbs each split peas, garbanzo, lentils, quinoa, lentil pasta for just in case. I just spend extra $10 per trip that goes into emergency rations.
I did not realize that you had a teaching background. That explains so much to me about you and the manner in which you present everything on your channel. You are an amazing woman and an awesome teacher as I am always learning when I watch your videos. Thank you for all you do for us.

Also love the taste of jalapeno, not the heat. Fortunately, I know how to take out the heat. Thank you for all the tips.

I make a pasta very much like what you showed but it has no tomatoes, we have an allergy, we use a can of pumpkin instead. I call it spicy pumpkin pasta and everyone loves it.

Wow! The cheapest canned black beans here is $0.72 a can! Also, I’ve been making my beans in my Instant Pot. I loooovvvee cilantro! I have some meal prep containers and it seems like the lids only go on one way. If I have trouble getting them on, I turn the lid around. Have you tried that?
The tortilla looks uncooked? Is they safe to eat? All my life up till now I was thought you must cook them but some folks don’t.. I find that puzzling?

Those were both great looking dishes Mindy! The taco one especially with the corn salsa and creamy sauce, it sounds really delicious. I'm going to make the creamy sauce next time I make tacos!

I Love cilantro. I would at least garnish almost every dish with it. Unfortubately, I am the obly one in my house who feels that way. My FIL would rather pull his eyelids off than eat cilantro.
I know this is older video but i just wanted to point out Alfredo sauce isn't vegetarian as it has Parmesan cheese which is unfortunately not veggie just wanted to point that out to anybody who is wanting to make this but wants to keep it vegetarian :) really enjoying your channel! you've given me some great meal ideas!

I always add one crushed garlic and about 1/2 tsp Oregano to my Pico!
I need to do that next time. We love garlic. I thought about the oregano but wasn’t sure how it would go with the fresh cilantro.

First time I tasted Cilantro thought it tasted like soap now after a few years add it in about everything.
I like cilantro but in small amounts. If there's too much, all you will taste is cilantro
