I make smoked meatloaf on occasion and it’s almost as good as brisket. Maybe even more so in a sandwich. I also do tri tip. It reminds me so much of prime rib and is perfect for a French dip. I need to give this place another try. Seems like a good guy and appreciate his thought process. Years back I thought Ozark Smoked Meats on center did brisket right. He used offsets with hickory wood and the smell was glorious!
