+Montreal Confections Thank you, Marlyn! Those thingies (no idea what they are really called) are super hand, especially if you need thin, even layers :)
I recently purchased those Cake, Bread Cutter Leveler 5 Layer Slicer Cutting Fixator from amazon I was wondering how they might work. I am so glad I watched this video. You cakes look like the snack cakes I use to buy and put in my boys lunches. :)
Yes, they are shiny because they are compound chocolate which does not need to be tempered to keep it's shine and snap. The smooth silicone mold (and any smooth plastic mold) will make it beautifully shiny. Regular melted chocolate will need to be tempered to achieve the shine, but even without tempering will be delicious!
Excellent video, Renee. I was wondering If you modified the melts before piping them to get that glossy finish. Did you add anything to the melt to achieve that or is it due to the brand you used?
+Joshua Reiss I did not modify the chocolate in any way... the glossy finish is partly from the high-quality compound chocolate (Merckens Brand) with the smooth finish of the silicone mold.
+Mary Fotchuk Hi Mary. No, I did not temper the chocolate, I used Merckens Coating Chocolate instead of real chocolate. The Coating Chocolate is formulated so it does not need to be tempered. And the little leveler clips things, I got from Amazon, I put a link in the description box... I have no idea what the technical name for them is, lol!
Greetings! I loved the video, is lovely, and I would like to try it, you tell me which is the number of nozzle you use? and another thing, you have cake recipe to make it consistent with, thank you !!!
If you use the coating chocolate, like I did, it should maintain it's shine, just don't touch the surface or you'll get finger prints! And, keep it away from humidity :)
I made these for Valentine's Day. I pick up a similar mold at Walmart as well. The presentation was beautiful, however, my family did not like them. They could not bite into them because the chocolate was too thick. LOL! Also, I placed them in the fridge so they we a tad bit cool. I will make these again and use more cake and less chocolate. It's one of these things you have to adjust to your liking. I just love the presentation and I plan to make them again. Thanks for the idea.
Do you find that Merkin's chocolate melts (both white (& the colored which is obviously white choc still) and regular chocolate flavored) taste better than the Wilton candy melts? Or is this just what you have on hand. Do you also find Merkin's has more of a shine or a better shine than Wilton candy melts do or again, is this just what you have on hand? I'm very curious and have recently become a big fan of your awesome desserts and little treats and the shine on those chocolate hearts was gorgeous! I've also heard of Merkin's here and there and have easier access to Wilton candy melts, but wouldn't mind giving Merkin's a shot if it's actually worth the shot! :)
+mchavarria91 Hi! First of all, I'm so glad to hear you like my videos :) To answer your questions... Yes, I do find that Merckens taste better. For example, this dark chocolate that I used actually tastes like chocolate instead of "chocolate flavored". The colors taste better too, but still have that vanilla candy flavor rather than a true white chocolate. Is it "night and day", no not really, but Merckens is better. They also melt to a much smoother consistency without having to add shortening (I still would add a little for cake pop coating). The shine surface is mostly from the mold, I think that the Wilton ones would have the same finish...
hi Renee I need your advice I'm making chocolate covered oreo's for my friends wedding I was wondering is it okay to stencil the finished oreo? I wanted to stencil it with edible gold
+maz khatun Yes, you can absolutely stencil an chocolate covered oreo- if you are going to use an airbrush or edible gold paint, make sure you work in small layers because the paint can bead up on the chocolate. Or, you can stencil with royal icing then paint that gold when it dries.
+Michelle Pinheiro I have the recipe up on SugarEd Productions Online Cake School... but, I will get my recipe up on my channel by the end of February!
+Maria do Socorro Lima da Silva hi Maria! I have my recipe up on my channel, I don't know if I linked it in this video, but it's my Vanilla Cake Recipe video :)
When you cut the cake and then you put the raspberry preserves on the cake and topped it with another slice of cake kind of looks like a a tech theater version of a sandwich
Loved that contraption you put on the knife Renee looks handy the little cakes are gorgeous!
+Montreal Confections Thank you, Marlyn! Those thingies (no idea what they are really called) are super hand, especially if you need thin, even layers :)

muy hermoso,tierno y con amor
Beautiful! Are they shiny because you used dark candy melts? Will they be equally shiny with melted chocolate? Thanks.
Awesome. ❤

Too good
wooow!! is the cover chocolate? or anything else??
Did you temper the chocolate? Where did you buy that leveler to cut the cake so thin?
You did a great job . Looks perfect.
+Mary Fotchuk Hi Mary. No, I did not temper the chocolate, I used Merckens Coating Chocolate instead of real chocolate. The Coating Chocolate is formulated so it does not need to be tempered. Oh they are very cute :)
Will the chocolate lose its shine after a while, or does it stay there? I love the shine as well and want to preserve it!
If you use the coating chocolate, like I did, it should maintain it's shine, just don't touch the surface or you'll get finger prints! And, keep it away from humidity :)
Amazing! Love this!
