While there we built over 25 C.R's (toilets) and built and repaired many homes and distributed food and other essential items thanks to this youtube channel and the subscribers.       he has been lucky, or maybe his mam looking after him behind the camera , so he is not scared . some other places in the philippines, like northern lozon, not everybody so kind, they can easily create problems for forigner. must be very cautious.

    Not many westerners eats like the locals like you did and you have really living into the lives of the Filipinos, you takes too what they eats and that makes you almost a Filipino.       Andrew Adam , it’s true Andrew to my knowledge Dustin is the only foreign blogger that lives the life of the rural people. His accommodation s the same n the area. Imagine no air condition sleeping n a very hot and humid temperature. No westerners would survive.

      The heat makes the banana leaf flexible thus preventing it from tearing easily. You can then use it as a plate or wrapping something. You can’t do that with a crunchy banana leaf.

      Fire or steam soften the banana leaves it also disinfect from any bacteria contaminants.

      Lemongrass is a good substitute if you want that citrus-y aroma, but you don't have access to something like a lemon

    We had a piggery back in the 90s here in Cebu City. And my grandfather will lechon a pig during fiestas and no pig matter goes to waste because my grandma will cook dinuguan out of the inards. I was a kid back then and enjoyed watching watching the adults preparing for the food.

      Yes just like my late grandfather, he never wasted food even when we eat as kids before, he would spank anyone who leaves jusy only a single grain of rice on their plates. He's a strict disciplinarian and i guess it did us lots of help now in our lives as adults.
      We should never ever waste anything because these are God's blessings to us.😇😇😇😇😇

    I’ve never seen how lechon started. This is educational for me. I wish you put the ingredients and how to cook the gizzards, brain, blood and intestines.     When blood is completely drained out after killing, Muslims calls it Halal (healthier). Filipinos does it the same way and when cooked, you won’t see meat with dark texture. Here in the US, you see blood in every meat you cooked and more visible in white meat as in chicken.

    Dustin They heated the banana leaf to make it soft that way it doesn't tear or break easily and it will hold the food much better when you use it..unheated leaf is crispy and tears easily.

      The charcoal has to be move further and further away from the pig as it's getting cook. The pig looks overcooked from the outside. Anyway it's still lechon, you just missed the best part of it, the crispy skin.
