I'd say 2-3 days. That is the one downside of making a homemade sauce as they aren't loaded with preservatives.

What is the difference from mayonnaise?
This is pretty much a flavored mayonnaise.
You can substitute the oil and the egg with mayo my way to making this is mayonnaise + garlic + salt + lemon juice + lemon zest will be amazing

how do you avoid the risk of getting food poisoned from the eggs salmonella?
I’ve never needed any additional steps to avoid salmonella after making the dish.

You seem confused. It's a food processor, just dump everything in, including the oil. The "add slowly" technique is only for mortar and pestol.
