    I made this today. I got some good quality balsamic but when I think I must have been reluctant to risk wasting it as when it simmered down the flavour wasn't anywhere near as intense as I expected.
    I used it as a meal on its own with bread and some chicken and leafy veg mixed in with the tomatoes. It was lovely and certainly something different.
    I would do it as a side dish next time though.

      Oh yeah this is very much an idea for a side or a starter - just a lesson in using vinegar.
      So this is the thing with some ingredients there will always be a better use for it.. so if you have a very boujee balsamic you wouldn't want to use it in something liek this as it will just be a bit pointless because you wouldn't taste its true potential. Like a really god olive oil you wouldn't use it fry a steak as you just wouldn't taste it.

    the yogurt + tomato dish was such a great lesson. never thought to mix yogurt with olive oil and yet it makes perfect sense! will try to remake it. thanks!

      Yes a simple seasoned yoghurt with lemon, salt and cracked black pepper is always a very easy win

    I truly think when I watch your videos it's like your talking to us all in your actual kitchen like live audience and your dishes at the end and the ingredients you use bring it altogether as you said full circle using your methods and your passion for cooking your food and the innovative way you bring the simple sometimes the boring ingredients make up a delicious dish by tasting and seeing what does it needs... Sweet maybe sugar... Needs tang... Lemon juice or vinegar flavour so salt pepper umami cheese so in the end and most of your full dishes take less th n 15 mins even with minimal or frozen ingredients ie no waste... This makes you to me an incredible cook and I don't mind saying I would rather watch you with your funny quirks than Gordon Ramsay again, my opinion but just as you bring your food full circle you bring the video full circle too with your lessons, the humour, no food waste and still produce the good recipes even with minimal ingredients ...

      This is probably the best comment I have ever received.. I just think with cooking it's about understanding the WHY... why does something taste bland, why is it too intense, why is it not intense enough. The big chefs know it but don't really talk about it, they are beyond it now for some strange reason. You whatch ramsey make a burger or a steak sandwhich he just says "take your lovely steak and IN to the pan, get a nice sear both sides, look at thaaaaaat" In this one sentence I would be asking... why hot pan, why sear, how long for, why rest.
      Anyway you get me hahha
