What you made the Moonshine with is that a fruit I never saw it.. we don't have that in the Caribbean but I know about moonshine in Caribbean we call it Bush rum and I have tried it it's good

You see the problem with this recipe is that if you give me 500g of kumquats, very soon I will be eating 500g of kumquats. In one sitting. And soon after that, I will have 0g of kumquats.

Kumquats are definitely Chinese ... they use the small bushes as a display at Chinese New Year ... in Cantonese 金橘 (golden orange) is pronounced KamKat and that is where our word came from.

love to try a kumquat, i've never had one
Very strong taste
and bitter!
Usually when I preserve them, candy them (I loooove candied kumquats, half dipped in dark chocolate) I pierced it as Andrea shows, and soak in water for 3 days, changing the water daily, to have some of the bitterness drained
Having said that, that is the case in Australia, I have noticed fruit can vary a lot from country to country…perhaps not as bitter elsewhere
