Cooking the salmon without the skin is a dealbreaker for me. Even if you don’t like the skin, you should cook with it on and just not eat it. It’s an extra layer to protect against too much heat and keeps it juicy and makes it cook even. 10/10 dish other than that.
This recipe is great, easy to do and I received enthusiastic compliments. As a personal touch I added rosemary and had to use 200ml of milk cream because at some point the sauce was too reduced. Thanks!

That's an amateur move. Smoking hot pan -> cold oil -> in go the protein, searing until you get a crust -> take it out = no burning + smoky pan flavor. But tbh combine spinach, parsley and basil in one sauce is kind of a blasphemy.

@@stijnhs I always imagine the bottom skin seals in the juices and prevents them from running out. Yeah it’ll still run out the sides and whatnot but I imagine it keeps the vast majority of it in preventing it from drying out
I cook with a similar method and it's delicious ! But i add more seasonings to my salmon and soak it in either vinegar or lemon for a little .. that way the middle is well seasoned and juicy .. people love when I prepare it .. I had salmon from restaurants that was good on the outside but fresh tasting on the inside .. so that's why I soak my meats and salmon is normally a thick fish

Made this last night, it's absolutely delicious and so easy!! I'll be making this recipe for years to come for a quick, but elegant fix. I am lactose intolerant (no cow milk), so I used Thai Kitchen unsweetened coconut milk instead of dairy cream... came out amazingly!!!!
It really is. But if you do it again, do 2 things. Let the salmon come to room temp before cooking and cook it with the skin. It will be even better. Skin side down first. You don’t have to eat the skin if you don’t like it, but cooking with the skin will retain the juices better and cook it more evenly. Also is an extra layer to protect against heat in the pan so it’s harder to overcook.

Really cool recipe! As a cook i would change few things but it looks really good :). Season only with salt, not pepper, it really gets bitter when exposed to high temperatures for too long, add fresh grinded pepper at the end, same for your parsley and basil, reduce FIRST your sauce to have a good texture, cut the fire off, and add your fresh herbs then, it will slowly infuse in the sauce, without loosing it’s fresh herbal taste.
freshly cracked peppercorns will get bitter as you cook longer. if you blend it until powder form then dont worry. will not get bitter unless you have a super sensitive tongue

When buying fish from whatever market, it is suppose to smell almost like nothing; A fresh smell. Often those who package fish will douse the fish in milk to hide its odor. When it smells “fishy” you know it’s old; not fresh. So when you buy your fish, make sure there is no white residue (milk) in the package.

Really cool recipe! As a cook i would change few things but it looks really good :). Season only with salt, not pepper, it really gets bitter when exposed to high temperatures for too long, add fresh grinded pepper at the end, same for your parsley and basil, reduce FIRST your sauce to have a good texture, cut the fire off, and add your fresh herbs then, it will slowly infuse in the sauce, without loosing it’s fresh herbal taste.

freshly cracked peppercorns will get bitter as you cook longer. if you blend it until powder form then dont worry. will not get bitter unless you have a super sensitive tongue

@@PotentChr0nic eh, how so? Overall cream, cheese and such fit with basil, much like how mozzarella is combined with basil and tomato. Just tried this myself, basil worked nicely, personally I was more scared about the spinach but it was good!

When buying fish from whatever market, it is suppose to smell almost like nothing; A fresh smell. Often those who package fish will douse the fish in milk to hide its odor. When it smells “fishy” you know it’s old; not fresh. So when you buy your fish, make sure there is no white residue (milk) in the package.
