Rainbowplantlife has a red lentil curry recipe I love which I omit oil & salt from. I also am concerned about the high saturated fat in the coconut milk. What can I use to replace the coconut milk?

I love Indian but almost all Indian food is tempered, with oil.... Tempering is done to bring out the flavors of of spices, which intensify with oil and heat. I've yet to find anyone who makes delicious Indian food that's sos free. Also, if you can find someone who can make Indian food that's sos free with an instant pot, I would be in love!
