I would rather have soup rather than that pho like the veggies look like just green decor, the beef is so pale and looks rubbery, the chilli looks fake and the rice noodles looks overcooked. The broth look s**t.
JSYK you can eat some beansprouts raw, but you should check the packaging to make sure it's safe. the reason why it can be dangerous is because bad bacteria like e.colli or listeria tends to grow fast on them.
A quick way to make sure it's crunchy and safe at the same time is to get hot water keep it boiling,and give it a quick flash of heat 10 seconds no more no less
The point of cutting them is to give a larger surface to get more flavour out of it. The garlic is baked so it has a milder flavour so as to not overpower the other tastes in the Pho. The point of charring the vegetables is the flavour. I don't really notice the difference myself, but there it is. While bay leaves don't grow in Vietnam, neither does MSG. If the reason you like to eat raw bean sprouts is the crunchiness, then soak it for awhile and rinse. Then blanch and stir it on boiled water not more than 5 seconds. That's the best way to eat bean sprouts.

Too much of this acid could lead to health issues such as: headache, dizziness, nausea and vomiting, convulsions and something a bit too worse, this is called oxalic acid poisoning. But, raw cilantro is low in oxalic acid compared to where the safe upper limit for humans is, so if you like cilantro, then just continue enjoying them❤🥰

These TV chefs specialize in quick/easy/lazy recipes that aren't faithful to the traditional dish because the viewers won't ever make the authentic dish if it takes special care and a lot of time. That's why they always cut corners and use different ingredients.
Rachel Ray also happens to have grown up in the area I live in and we don't like her. She specializes in "quick and easy" cooking according to her, and was never actually a cook anywhere, the closest she got was being a Manager at a pub in a local fancy hotel. She just taught a few 30 minute cooking courses and managed to get herself on national TV.
I believe you completely. Like Uncle Roger said in his Thai Green Curry weejio, "Don't brag about being fast. It easy to be fast when every step wrong." Another fact is if you want to cook quality food, especially ethnic foods, you must invest the time and use the correct ingredients.
