Curry Veggie Chunks & Chickpeas With Brown Rice

  • Ingredients:
    🍃1 1/2 cups veggie chunks/ soya chunks ( I used the Nutra chunks brand). Soak in hot or warm water for a few minutes then squeeze and drain liquid).
    3/4 cup cooked chickpeas
    1 1/2 tbsp curry powder (I used betapac brand)
    1 1/2 tbsp all purpose seasoning to marinate chunks, plus additional seasoning (season to your liking)
    1 1/2 cups water
    1 1/2 cups coconut milk ( I used homemade but canned is fine)
    3 stalks scallion
    Few thyme sprigs
    1/2 large scotch bonnet pepper ( You cut a piece or use whole)
    1/4 bell pepper
    1 medium size carrot
    1/2 large onion
    5 cloves garlic chopped
    A pice of ginger (finely slice about 3 pieces)
    1/2 tsp allspice
    About 3 tbsp unrefined coconut oil( 1 tbsp to marinate chunks just to allow the seasonings to coat the chunk and add the remaining to cook).
    🍃Brown rice
    2 cups longe grain brown rice
    3 stalks scallion chopped
    1 tsp salt
    1/2 tbsp unrefined coconut oil (I kinda got away with the oil in the video but you only need and 1/2 tbsp to sauté scallion).
    1 1/2 cups water
    ENJOY!!!

    This came together very nicely 👌, but I made an error. I used 2tbsp of betapak curry powder as I used 2 cups of chunks and 2 carrots lol, a bit of an overkill so now I know for next time. Betapak curry powder is strong, its no joke. Thanks again for the recipe, it was nice same way

      Next time just throw in some coconut milk to tone down the curry. 😄

    Delicious food 😋 ... Today I ordered Soy Curls from Amazon, and I am excited. Is it possible to order the chunks you're cooking from the Florida store?

      Ok that’s good! I’m not quite sure, however you can purchase the soya chunks online or Walmart. Its comes me in a variety of brands.

      I purchased it at at local supermarket here in south Florida. I used the betapac brand and you should be able to find it at any local supermarket in the West Indian section.
