Also, I’d skip the cookie crumbs and add more apple! I’d definitely keep the apple juice, which look pretty thick. If you think the juice is too runny, add a tablespoon of instant tapioca to it.

Love the pie! But 1 bit of advice, if you are going to spend a long time making a pattern on the pie - don't cover it with ice cream! Put the ice cream to the side of the pie :)

Your design is nice, but you should have retained the juice because with the addition of the cookies, it looked dry. Pro tip: cinnamon will disperse evenly, if first you dissolved in hot liquid.

I think baking the pie crust empty first lightly then filling it and baking it will ensure a non-soggy, fully cooked crust.
That's how I make it. I brush the edges with egg and the top crusts sticks perfectly. This way the filling isn't dry
