  • East Coconut Stuffed Pan Rolls Recipe
    Pancakes are traditionally made by Catholics on Shrove Tuesday, a day before Ash Wednesday, which is the first day of Lent. Here in India, we make Elijam Coconut Pancakes even on normal days and we don’t wait for Pancake Tuesday to make them.
    The East Indians Elijam filling is made of freshly scrapped coconut and sugar and by adding some dried fruits and nuts, while the Goans use jaggery in their pancakes. This Pancake is made o colorful batters, by using edible food colors. However, you can also keep it plain and simple. Flour, Eggs, and Water are the key ingredients that go into making this thin flowing batter. These colorful batters are poured by a ladle on a frying pan to make pancakes. These are later stuffed with coconut and dry fruits filling, rolled and served, while they are super soft.
    Ingredients for the Pancake Batter:
     250 gms Plain Flour / Maida.
     1Egg.
     A pinch of salt.
     Water as needed.
     Oil to coat the pan.
    Coconut & Dry Fruits Filling
     1 whole Coconut freshly scrapped.
     ½ cup Sugar (you can add less or more depending on what sweetness you want).
     1 teaspoon Cardamom powder.
     A handful of Golden Brown Raisins (Sultanas).
     10 to 15 Cashew-nuts roughly chopped.
     7 to 8 blanched peeled Almonds chopped into pieces.
     1 teaspoon Ghee.
     Few drops of food color of your choice.
    Method of Pancake preparation:
    1. Mix the flour, salt, egg and whisk into a thin batter and add water according to the consistency required.
    2. The Batter should be thin but while pouring maintain consistency.
    3. Heat the frying pan preferably, non-stick.
    4. Brush it with a little oil.
    5. Pour a ladle full of batter and roll the pan for the batter to spread evenly on the pan.
    6. Cook the pancakes on a medium flame.
    7. It may take a minute or two to cook.
    8. Once it leaves the sides, it is ready to be removed.
    Making Of Coconut Filling, Stuffing and Rolling
    1. Add Ghee to the vessel and then add the fresh scrapped coconut, sugar, and the remaining ingredients.
    2. Mix well till the sugar melts.
    3. Add color of your choice and remove the same from the flame and keep aside.
    Assemble the Pancakes by filling in the Coconut mixture. Then roll the pancakes like you do for spring rolls and tuck their ends inside. Serve the pancakes right away, while they are warm and super soft.
    These Elijams are best enjoyed with evening tea or as a dessert.

    Elijam Pancakes is basically eaten all year round but before Lenten season starts this Coconut Stuffed pancakes is a must for every East Indian household

      You could try corn starch... It should help

      You can try besan (gram flour) or corn starch. But the taste will differ.

    No milk is added to the coconut mixture & for the batter the eggs are added after the milk and water, it's firstly beaten and then the eggs are added and beaten again to a smooth batter.

      There are different methods to make Pan Rolls. Some people use plain coconut milk as wel and the results come out well.
