East Indian Pancake which is commonly called as 'Elejao' is a Traditional Sweet Dish made by the East Indians.
It is usually made on Shrove Tuesday/ Pancake Tuesday or on any of the Occassions/Feast Day.
Elejao is a coconut, jaggery stuffed with dry fruits in a thin crepes which is made up of flour and eggs.
This is my Mom's recipe.It's from the house of East Indian/Salsette (Mumbai Catholics) 😊

Wow! So colourful pink green white pancakes. The ingredients mixture is yummy. Today is Pancake.Tuesday. So am gonna make.it..Thanks for sharing. In the maida mixture, my mom used to add a little rosewater. wow they used to smell and taste so yummy.
