Bay leaves are dehydrated and added in many seasonings and ingredients on shelves all over. If it was unhealthy, im sure many dishes wouldn't call for them.
Great recipe Kirby..Thanks for sharing...My Mom makes this but when the meat is done she sets it aside and she fries up some potatoes shaped like circles...drains them on paper towels ..salts them... then puts the fried potatoes on top of the chili colorado...it's sooo good with her yummy homemade soft flour tortillas. My friend, I have had this dish in many ways growing up. If we were lucky, it was with meat. Some rough parts of my child hood we had many potato, rice and bean dishes. I am always humble on my upbringing, I will never knock how anyone has enjoyed these classic dishes growing up. The simplest dishes are the most best enjoyed, there was a lot of love placed into them. I will never forget that!

I haven't cooked on a crock pot in several years, if there is a searing feature. I can see this recipe being on there. If the searing feature is not there, no worries. That is a beef we make often considered carne con chile. Beef in a chili sauce.

Oh wow Kirby! Reminds me of Southern New Mexico when I was a kid! We would take the leftovers mule deer hunting and make burritos put them in our backpacks! Looks so delicious Kirby! Had me licking my PC screen 😂😂😂😂🤙👊🏻🤟🏻!
Joe, when I was younger, those New Mexico spices were hot. My family used them a lot, it took me years to get comfortable with them. On top of all that we had Chile de arbol. What a spicy day lol.
Very nice. I actually thought it would take longer to get really tender meat but from your bite at the end, it looked perfect. I've done the salsa / sauce the same way but don't grind the bay leaves. I think the way you sear the meat makes a big difference. Giving this a try soon.
The bay leaves are a thing I used to see the elders in my family do. I know most just braise the leaves in sauce then remove them. But most sauces I have seen in Mexico the leaves would be blended in sauces at some restaurants I have been in. I hope you enjoy it. Thank you.

Looks awesome, I might try this in the crock pot.
Don't forget the sear, that is really important flavor wise. Maybe the Instant Pot - sear in batches and then back in on slow cook.
