I’ve looked through the comments, and so far no one has dealt with the corned beef issue-so here goes: When Irish immigrants of the 1840s got to New York and eventually were able to afford food that they hadn’t grown themselves, they discovered corned beef in local delicatessens owned by their Jewish neighbors. They added a traditional colcannon, made with cabbage or kale, potatoes (of course) and leeks; and voilà- the Irish American “Jiggs and Maggie” dinner was born.
