This is almost identical to "chicken fried steak" that is very common here in the U.S. Hammered flat, double floured, and fried. Do you think the butterfly technique is better than hammering it down?

Butterfly technique preserves more of the muscle texture and as a result more moisture. Hammered technique likely creates a more tender chicken.
