- Today i am sharing my daily cleaning routine! This daily cleaning routine is what helps me keep my home clean. I am also sharing a weekly grocery haul! $295 haul! Also, I created a delicous enchilada recipe I will be sharing with you all today! So, If you need cleaning motivation, grocery ideas and a new recipe for dinner, than you have come to the right place!
Anna's Chipotle Chicken Enchiladas

Chipotle Enchiladas
Serves 8
Ingredients
3 boneless/skinless chicken breast
1/2 large onion diced
2 garlic cloves minced
1 tbsp spoon chipotle seasoning
1 tbsp oregano
1 tbsp cumin
1 8oz can tomato sauce
salt & pepper to taste
3 tbsp spoons avocado oil (more for frying)
18 corn tortillas
One 28 oz can green enchilada sauce
6 cups shredded cheese
Sliced black olives
6 green onions sliced
Directions
Boil and shred chicken. Set aside Add oil to heated pan. Add chipotle seasoning, oregano & cumin to oil. Stirring continuously until fragrant. Add tomato sauce. Cook for 1 to 2 minutes until mixture darkens in color. Do not skip this step. This is where most of your flavor is. Add onion and cook until soft. Add minced garlic and stir constantly until fragrant. About 5 to 10 seconds. Turn off heat. Add in shredded chicken and toss to coat. Pour enchilada sauce into a bowl large enough for tortillas to lay inside Add avocado oil to a small pan and fry your tortilla 30 seconds each side. Place into bowl of sauce, coat and lay into a 8x11 pan. (I use 6 tortillas per layer. Once you have a layer of tortillas add a layer of your shredded chicken mixture. Then add 2 cups of shredded cheese, sprinkle on your green onion and olives. Add a1.4 cup of your enchilada sauce over the top. repeat two more times. Cover with foil and bake at 350 until cheese is bubbly. Let stand for 10 minutes before cutting.
Top with fresh avocado, sour cream and green onion. We add salsa!

Oh my goodness I have OCD. If I forget to empty Otis’s water bowl and I’m in bed, I have to go downstairs and wash it out. Everything has to be in order before I go to bed. it’s just me and Otis and my bed has to be made every day. I vacuum three times a week. Everything has to be exactly how it is before I either leave the house or go to bed at night. I stop coloring my hair when I turned 55. I am 73 and I just use eyebrow pencil, lotion, and lip gloss. Your hair looks beautiful lighter ❤❤I stopped makeup years ago, but that’s just me. 😊😊 have a blessed evening and a blessed weekend love from me and Otis.

Thank you! I am soooo glad to know I'm not the only one with a herd of dust bunnies lurking around the house! I live by myself (w/2 pets) and dry mop daily! Where in the world do those pesky dust balls hang around!? It's just wild! Loved this video. You certainly motivate me to get going every day with the house. I am becoming one with it & loving it!

We all have Gremlins who run around behind the scenes to make sure we always have something to keep us busy. At least that is my explanation for dust bunnies. And maybe my husband, daughter, dog and two cats !! Anyway, love your motivation and design ideas. Can't wait to try these enchiladas. I am slmost done with going through our closets. We have 6 bags so far. An idea to look into. Our local high school music department started a clothing drive fundraiser when my daughter was in band. We collected two moving trucks full of clothes and took in a ton of $$$$ . Now it is an ongoing fundraiser twice a year. Look for something like this in your area. It helps the kids so much. Keep up the great work. Keep me motivated.

I also have to do my chores before leaving the house. I put that on myself, my husband says I am a bit too obsessed. The cost of groceries is crazy. My daughter and son in law have 5 children and I am sure they are spending a fortune on groceries. Great video❤

I love watching your videos because you clean to my level of perfection! Most RUclipsrs do not go to the extra level like you do. For instance, their bed making is usually sloppy in that sides are not even with crisp lines, pillows are put on slouchy, and I hate when the throw blanket is scrunched and messy😂. I am very OCD and I can’t stand those type things! But not you. You are so neat and and you bring that level of perfection in everything you do. In general, I just enjoy spending time with you and Ernie. Tried the enchiladas and they were amazing❤️

Here in Western NY we have at least 2 more month of cold and don’t dare put anything in the ground until at least Mother’s Day. I’m so envious of those who live in areas where Spring comes earlier. I’m a lot like you I can’t leave until things at home are done. I hate coming home to work.
Guess what I saw today?? Lowes has trees and shrubs out and they are getting all their mulch and ground cover deliveries! I almost cried🤣

Your hair color and cut look gorgeous Anna! I had to give up color due to my psoriatic arthritis but years ago my gray was not a pretty color now it is pretty much white and soft. I understand how you feel about keeping up with the grays. February 5, 2022, I went cold turkey and stop coloring my hair blond. I had shoulder hair and every two months I had it trimmed into a bob. I am done with the process and my hair is shoulder length. I have no regrets and my hair is silver and white. I get a lot of more compliments with my natural color. Mother nature knows BEST. I swim as you know so the blond was too much along with the chlorine in the pool. My hair is soft, healthy and now I am free. I have saved a lot of time and money as well. You are a fabulous cook. You had taught me something. I never knew you could shred chicken in a mixer. Thank you for all your hard work that you put into your videos. You are so delightful my friend.

We’re having wonderful, cool, rainy weather this week in Phoenix. It’s nice to have every once in awhile. I’m enjoying wearing cozy, soft clothes and drinking warm drinks. Summer will be here before we know it and although I like the heat it gets really old by August. I do though feel so sad for the people in Southern California right now. They are being overwhelmed with the latest weather.
I can’t leave the house with undone dishes etc. it’s just the 2 of us so the house is never messy. Before leaving on vacation I do a deep clean. I need to come home to a clean house.

We just had your Enchiladas and they are so good! My husband had seconds, he liked it so much. I didn't roll any I just did the stackable and it came together so easy. They smelled delicious while I was putting it together. I have to say this was the first time I shredded chicken in my stand mixer and I will never do that any other way now. I works great!

I recently simi-retired and I was on a mission to deep clean and go through every closet and drawer in my house and organize. But, my bedroom needed to be first, and it seemed overwhelming. My closet is deep cleaned now and it feels sooo good. On to the kitchen cabinets next.

I really like your new “doo.” You can see in my picture I don’t keep my hair very long anymore and I get it highlighted every so many weeks. That hairstyle looks good on you. Hi Anna! Oh I absolutely have to come home to a clean house after vacation. The laundry catch up is enough! 😊 I wish I was more adventurous in the kitchen! My husband is like that, will try anything. Me I need a recipe. Lol Every once in a while I will find a recipe and adjust it to our taste. I really just need to throw caution to the wind!

Love your hair! I fought the grays but finally decided a few years ago to stop coloring and highlighting. Grew it all out then decided I wasn’t ready after all and colored again. 6 months later decided to go gray again. My main reason was the chemicals (mom had Alzheimer’s and I’m just trying to avoid what I realistically can). Sometimes I get tempted again but i hope I stick to it - I’m 62, so quite older than you.
I’m going to make enchiladas your way. Here in Michigan, can you believe it’s getting up to 55 tomorrow! Oh my, the MUD with the ground thawing so quickly. We have 2 big dogs and carpet … I cannot keep on top of it. I want so badly to use my carpet cleaner but there’s no way until it freezes again. Someday, hardwoods and a room for the dogs to dry before they come in! 😅 Well, that was quite a brain dump comment from me today lol

Hey Anna, love your channel so much! I enjoy the cleaning but especially decorating and gardening ! I know what you mean by the dust on furniture! Mine will be like a solid sheet of dust. Of course if you open a window or kids or someone comes in and out alot it'd so much worse! I have no idea though where that day after day dust comes from because girl I live alone and grandkids don't come that often. I began to think I am the one attracting the dust 😂😂😂😂

Anna thanks for the great recipe and the tips for making the enchiladas so much easier. I love the idea of layering them instead of rolling! I am definitely going to do that the next time I make enchiladas. Also going to use green chile enchilada sauce instead of red.

I have to clean before I run errands or go to work and yes there's been times where I deep clean and declutter areas on our home before vacation especially in the summer since we leave for about a month of traveling so it feels nice to come home to a home you forgot how you left it 😂

Hey Friend, Happy Thursday. I really hope the groundhog was right about an early spring because I’m tired of the freezing cold weather. 😂🥲 I’m the type that doesn’t really care about getting my house work done before leaving the house. However my mom is definitely the type that has to get the house work done before she leaves or she will talk about it the whole time she’s out. 😂 I’m a little bit of both I need the cleaning motivation and I enjoy watching cleaning videos. I don’t know if you’re aware most people aren’t but fabric softener is terrible for your washer! I would recommend you do some research because that may save your washer☺️
Ive heard this. And, Ive been married for 40 years and this is only my 3rd washer Ive owned. 2 of which i left with buyers of my homes. I've never had a issue. But, I will tell you what i need to fix, my hard water. That is what will kill my washer if we don't do something soon. Its horrible here.
I am one who needs to have my house clean all the time. Even if I am going to work in the garden lol. My mother always told me two things. Always have a clean house because no matter how many times someone comes to your house they will always remember the first time they saw it. And then if course make sure you are weariing clean underwear when u leave the house in case something happens. Lol. And of course those two were embedded in my kids brains. 😂😂😂😂😂
