    I've seen many forms of halva but this is totally unique in its consistency. The forms i have tried were sliceable.

      Halwa in the subcontinent is different. It can be made with semolina, reduced milk, almonds, eggs, bottle gourd, etc. The middle eastern versions are usually made with tahini and are sliceable.

    Stirring boiling milk for so long that butter simply separates and can be collected is a feat.
    Similar to how "Dulce de leche" (not cajeta, never confuse those two) is made in Mexico.

    This is not exactly halwa..this is called Kalakand and is famous sweet from Alwar (another city in Rajasthan)
    Halwa usually is made from Wheat Flour, sugar and dry fruits, and is a common offering in religious ceremonies locally called as "Prasad".

      No my dear friend for kalakand you have to break the milk with some acidic stuff while the milk is in right consistency and reduce it by boiling. In Bengal this stuff is called chachhi.

      @@saptarshimandal7278 May be you are talking about that specific dish from Bengal, but kalakand bole to milk cake is exactly prepared the way how they are preparing that halwa. We don't use any chemical or break the milk in kalakand making process.

      We call that sweet 'GAJAR PAK' or GAJAR HALWA. Quite famous in rajasthan. At our home we eat this sweet throughout whole winter and easy to make at home.

    ohhh, this dish is very similar to biko in the philippines, did biko originate in india?, here we use sticky rice, coconut milk/cream (we dont really have cows here in the islands), palm sugar, and maybe some spices like anise and what nots. you can add peanuts if you want aswell and other nuts and fragrant spices. like the rest of southeast asia, we were heavily influenced by indian culture a millennia ago. Note: Biko is not necesarrily firm like a rice cake, people cook it differently, my familie's biko is similar to the gulab above, but a tad, like a miniscule bit watery or less frim rather. it depends on who cooks it, where they are from or who influenced them, and their preferences.

    Very good coverage. But, in my personal opinion, the coal breaking workers should be given safety equipment, so as the chefs who stand in continuously hot area. Also, when the plates are carried across street, at least it should be covered, to prevent dust.

    Halwa originated in Arabia...Right.. a delicacy which is made up of mainly 2 main ingredients, milk and sugar, which are naturally very rare to produce or to procure in the arabian region.. 😂
    Whereas there were many regions around Arabia which had abundance of the materials needed to make halwa (India, Persia)...
    Just because many things got introduced to the western world through the arabian route, doesn't mean it all was invented there..

      You are right...the word halwa is of Arabic origin and is used for generic sweets in india but the technique, ingredients and taste are quite different to halwa in the middle east.

      After boiling milk for ours and ours the liquid part of the milk is evaporated and milk solids are remained, that is what halwa is.

      This is not kalakand. This is chachhi. If you exclude sugar in chachhi it will be called khoya. For kalakand you have to break the milk while it is in right consistency and reduce is further.

    I’ve toured Rajasthan enough number of times to come to a conclusion that cities like Jaipur, Udaipur etc. have nothing in comparison to the food joints in smaller towns like Pali, Bar, etc.
    I’ve had the best Kachori, Ghewar, Gulab Halwa etc. in the smaller towns.

    They forgot to mention one secret ingredient, the sweat from the workers has salt in it, which gives it it's unique flavor.
    When the workers change, the flavor varies.
    So each time we have this, it has a unique different flavor.

    I can't get past the workers hammering coal by hand with no respirators or anything. I think the description misspelled "sweat" shop. All that for just a confection?

      It's not just a Confection or sweets. In India it is a big deal because it's not only eaten by people.... But is given as an offering to God in temples and home and are eaten in every special events be it birthday or wedding or anniversary

      Whilst you are right, majority of coal mines are still run by small operators with poor villagers carrying coal once mined. It’s not just for confection, it’s lack of knowledge about black lung disease which western societies experienced in the last century.

    I live in this city and often buy this Sweet from the same shop.
    Though the business is extreamly good but owner will not improve the cleanliness and hygiene conditions.
    Yes I say it with guarantee that we all savour and eat these very workers sweat and body hair.
    Atleast after corona the hygeine standards should have been improved but owners are only worried about profits and hygeine is thrown out of the window.
    Food Safety Standard Association of India should seal shut this sweat factory immediately and impose huge penalty for flouting the set laws. I wonder what is the area head from Fssai is doing, taking his cut I guess.
    Disgusting is the least i could say.

    Halwa was never a saudi thing .. main ingredient is sugar , saudi never had sugar cultivation. They would have given it a name by abolishing hindustani name. But it was always a subcontinent thing.
