Yep. This is how I do it. Plus, I love to save this. If you put the noodles in it, they get soggy and mushy. Keep them separate and just heat up the soup. Put some cold noodles in a bowl. The soup heats the noodles. The noodles cool the soup. It’s perfect.
Pro Tip: Sautee vegetables in the fat from the ground beef when it's halfway cooked, that's how the Italians do it. There's no need to remove and drain.

My recipe is from my Italian father and grandmother who was born in Sicily. I’m debating on adding some ground beef to one pot just to see how it adds to the flavor although it’s a family favorite with just sausage for decades now!
I made this today. I used chicken bouillon cubes with tomato 🍅 instead of tomato sauce. It was so yummy. I will definitely make this again. Thank you for this amazing recipe.

This was very VERY good, and it seems to get better every day I have it as leftovers. I used celery, but next time I think I'll dice them and the carrots a bit smaller. I'm also gonna sub the parsley with green onion because i just don't really like parsley, and I think green onion will work really well in this dish. I was considering trying a different tomato sauce next time (I used Hunt's) and maybe using beef broth instead of chicken, but the more i eat this the more I enjoy it, so I think I'm gonna leave it as-is for now. I would think urinating in a pot is better than anything from Olive Garden. It’s a joke to call that Italian. Why is there ground meat in the soup? If this is how the soup in Olive Garden then it just proves what I wrote. A few ingredients is all it takes, lard, carrots, onions white beans, the soaking liquid, the pasta. What you made is a minestrone, and a Fugazy one at that.
True, it's not authentic. But Olive Garden isn't authentic anyways, never has been. I truly love going to a true Italian family restaurant but I can say this soup is pretty good. I remember making this and finding the recipe for the authentic one and, honestly, the authentic recipe surpasses this one by far. Although I will still make this one simply because family members do enjoy eating it. Just as long as I can feed my family and try new things while cooking I'm happy for any video or advice people are able to share about cooking.
