Beetroot Falafel | The BEST recipe

  • I love the vibrant colour of beetroot and love using this beautiful ingredient when I make Falafel. These little balls of Falafel joy are packed full of flavour which is provided from the spices, tahini, onion and chilli. This is something you can make in advance and cook when you are ready to eat.

    Serving suggestions
    Serve on a mixed salad with a yoghurt and tahini dressing or on some yoghurt and a sweet chilli dipping sauce.
    Serve on a flat bread with some salad (lettuce, tomatoes, cucumber, red onion)
    Serve in a wrap with your desired sauce/ salad
    Ingredients
    ½ tsp olive oil
    1 onion finely diced
    1 red chilli finely diced
    1 tsp ground cumin
    1 tsp chilli powder
    1 can of chickpeas drained
    250g raw beetroot, trimmed, peeled, and grated
    1 piece of white bread
    1 small egg
    ½ tbsp tahini
    Salt and pepper
    Pre-heat oven to 180°C Fan/ Gas 6 / 400°F.
